Caramel Pancakes?

Last night, my boyfriend mentioned that he wanted to try to make “chocolate chip caramel-filled pancakes.”

Yeah, you read that right.

Now, my boyfriend, Jeremy, is proud of his pancakes. He typically won’t let me make them. Either I “didn’t add enough baking powder” or I “flip them too often” or some other nonsense. The man likes his pancakes a certain way. It’s strange.

So he wants to make chocolate chip pancakes with a caramel filling. We spent far too much time last night trying to figure out how this could be done. We discussed how you wouldn’t be able to add the caramel piece right away, or it would sink to the bottom and either burn or stick to the griddle. But if added too late, it wouldn’t cook into the bottom “half” of the pancake and when you pour more batter on top and flip it, it would sink to the new bottom.

We think we’ve figured out how to do it properly, and I’m excited for the day he wakes up early enough for us to try it. (It’s past 11am right now, and he’s still sleeping. Boy has no idea how to go to bed on time.)

  1. That sounds sooo good. Please post how (and maybe send me some?) once he makes them.

    • If we can make them work, there will certainly be a recipe, or at least tips. And if I thought there was any way they’d make it through the postal service without becoming disgusting, I’d send them to everyone!

    These pancakes sound delicious. When you make them you definitely have to take a picture of it. I will have to try this myself.
